Saint Hippolyte
Making wine in Alsace since 1762

In the heart of Alsace lies the village of Saint-Hippolyte, a place shaped by centuries of history and winemaking tradition. Nestled in the foothills of the Vosges Mountains and watched over by the majestic Haut-Koenigsbourg Castle, it is here that Biecher family founded their wine cellar in 1762.
Today, Olivier Biecher carries forward his family’s long-standing winemaking tradition, blending deep respect for the past with a passion for expression, authenticity, and quality. Each wine is a reflection of this legacy, thoughtfully crafted to express both the unique character of the land and the enduring spirit of the family.

ORGANIC PRACTICES
Our organic wines are crafted according to the principles of organic farming, which exclude the use of synthetic chemical fertilizers, pesticides, and herbicides.
Our goal is to produce high-quality wines that express the true character of their terroir, encouraging a harmonious relationship between soil, climate, and vines. This organic approach is the natural result of a long-standing commitment to environmental protection, respect for the land’s potential, and the creation of wines with a strong and distinctive identity.
